Nam Khao is a traditional Lao rice salad that offers a combination of crispy rice textures, fresh herbs, and aromatic seasonings. The dish traditionally uses seasoned rice balls that are deep-fried until crispy before being broken apart and tossed with the salad ingredients and a seasoned dressing made from herbs and pantry staples.
Etymologically, the name of the dish derives from two Lao words. The word nam (or naem) refers to the fermented pork sausage that traditionally serves as its main component, while khao means rice. The dish originates from Tha Deua, a small port village in the Vientiane region of Laos.
Among the Lao people, Nam Khao is also known as Naem Thadeua or Naem Khao Tod. Its primary components consist of crispy rice balls, fermented pork sausage (som moo), grated coconut, peanuts, as well as fresh mint and cilantro.
Preparing the Crispy Rice Base
To make Nam Khao, the first step begins with preparing the crispy rice base. Combine 370 grams of cooked rice in a large bowl along with two tablespoons of red curry paste.
Add two tablespoons of vegetable oil and one tablespoon of salt to the rice mixture. Stir all ingredients thoroughly until well combined, then spread the rice evenly over a baking sheet lined with parchment paper.
Afterward, bake the prepared rice in an oven preheated to 190 degrees Celsius (375 degrees Fahrenheit) for 20 to 25 minutes. Halfway through baking, stir the rice to ensure even crispiness until it turns a rich golden brown.
Once fully cooked and crispy, remove the rice from the oven and set it aside briefly to cool down.
Mixing Fresh Salad Herbs with Dressing
While waiting for the rice to cool, the next step is preparing the salad components and dressing separately. For the salad base, dice one cucumber and place it into a bowl along with a handful of chopped cilantro and a handful of chopped mint.
Add two thinly sliced shallots, one finely chopped chili, and 30 grams of crushed peanuts to the vegetable mixture. Once all the salad ingredients are gathered in the bowl, proceed to make the dressing.
Prepare the dressing by whisking one tablespoon of minced ginger, one minced garlic clove, two tablespoons of soy sauce, and the fresh juice of one lemon in a small bowl. Next, mix in one tablespoon of brown sugar, one tablespoon of oil, and one tablespoon of chili crisp to enhance its flavor profile.
If the dressing feels too thick, add one to two tablespoons of water to achieve the right consistency before tossing.
Tossing the Salad for Traditional Serving
Once all components are ready and the crispy rice has cooled, the final process involves bringing all the ingredients together in a single bowl. Add the baked crispy rice to the large bowl containing the fresh vegetables and peanuts.
Next, pour the prepared dressing evenly over the ingredients. Toss quickly using spoons until the bumbu and dressing thoroughly coat the rice without ruining its crispy texture.
To enjoy it traditionally, Nam Khao is commonly served alongside fresh lettuce leaves. Spoon a portion of the rice salad onto a single lettuce leaf, wrap it up, and enjoy in a single bite.
