Black Ivory Coffee is a luxury drink produced in the province of Surin, Thailand. It is famously known as the world's rarest and most expensive coffee. This unique brew is naturally refined by Asian elephants in a process that takes many years to perfect.

The brand was started in 2012 by a Canadian man named Blake Dinkin. He wanted to create a high-quality coffee that was both ethical and helped local communities. After looking at many different animals, he found that elephants were the best choice for refining coffee beans.

This coffee is served in some of the most luxurious hotels and restaurants across the globe. It is a product for those who love rare things and want to help save elephants.

From Elephant to Cup

The history of this coffee is tied to the founder’s desire for a more humane way to make animal-refined coffee. Unlike other methods that might use cages, these elephants live with their caregivers, called mahouts, and eat the coffee cherries as a snack.

The process uses high-quality Thai Arabica cherries that are hand-picked from high mountains. These cherries are mixed with the elephants' favorite foods like bananas and tamarind to make a healthy treat. Inside the elephant’s stomach, a natural process called bio-fermentation happens.

This digestion takes between 12 and 72 hours and changes the chemistry of the beans. Natural enzymes break down the proteins that usually make coffee taste bitter. This results in a bean that is remarkably smooth.

Once the elephants pass the beans, the mahouts hand-pick them from the dung. The beans are then taken to a local school where students wash, rake, and dry them in the sun. These students are paid a good wage, which helps them save money for their future studies.

After drying, the beans are sorted carefully by hand to make sure only the best ones are kept. They are roasted only when someone orders them to ensure they stay fresh. This slow and careful work is what creates such a premium product.

Why This Coffee is Truly Special

What makes this coffee different from any other is its extreme rarity and incredible flavor. Only a small amount, about 225 kilograms, is produced each year. This limited supply makes it highly exclusive and sought after by collectors.

The production is also very inefficient. It takes 33 kilograms of raw cherries just to make one single kilogram of finished coffee beans. Many beans are lost because the elephants chew them or they cannot be found in the wild.

The flavor is a major reason why it stands out from regular coffee. Because the bitterness is gone, the coffee is very smooth and tastes more like tea. There are some interesting notes of chocolate, tamarind, and spices.

Some people even taste hints of tobacco and leather in the aroma. To get the best taste, it is often prepared in a special glass siphon brewer. This old-school method creates a beautiful reddish-gold liquid that is a joy to look at.

Beyond the taste, the coffee is special because it is a social enterprise. A part of every sale goes to a foundation that provides health care for elephants in Thailand. The company also pays its workers much more than the average wage for coffee pickers.
