Malaysia’s kari ayam has officially been crowned the best stew in the world, beating out a hundred other contenders including the famed rendang, in a testament to the rich culinary traditions and deep flavors that the country brings to the global table, according to reports by TasteAtlas, April 2025.

This beloved dish, celebrated in both Malaysia and Indonesia, is a hearty chicken curry made by simmering chicken pieces with aromatic ingredients like onions, garlic, ginger, ghee, tomatoes, and coconut milk, enhanced further with spices such as cinnamon, star anise, turmeric, cumin, fennel, curry leaves, pandan leaves, chilis, and lemongrass to create a deeply complex flavor profile.

In Malaysia, traditional preparation often involves using a clay pot, which is highly favored because it prevents any metallic reactions with the acidic or spicy ingredients, allowing the kari ayam to slowly cook in its own natural juices and develop an incredibly rich, layered taste that defines authentic Malaysian comfort food.

Before serving, it’s common practice to brighten the intense flavors by squeezing fresh lime juice over the top and garnishing the dish generously with fragrant coriander leaves, adding a final fresh note that perfectly balances the deep, creamy, and spicy essence of the stew.
